I don't have a garden. I kill cactus. I do frequent the farm stands that surround me, however, and buy only what I am going to eat. Once in awhile, someone with a garden will pass me freebies, but again, I try to take only what I am going to eat.
Yesterday, I picked up a yellow squash and a small zucchini. I sliced them thin and cut up a small onion. I stir fried the onion in a small amount of butter, just to soften it up. I put all the vegetables into a microwave dish and poured some Ragu brand spaghetti sauce on top. Covered, and put in the microwave until the vegetables were soft. I then sprinkled mozzarella cheese all over and microwaved again until the cheese melted. This was a nice light meal. Next time, I may stir fry the squash until it is barely softened to make it less crunchy. It must have been good. My mother, who only usually eats a small helping of dinner ate two helpings! The ingredients cost me less than $5. I have leftovers, enough Ragu to use for another meal, and didn't use even half of the cheese, so it proved to be an inexpensive meal. I served it with fresh peaches. To give credit where it is due, I believe this is modified from a Weight Watchers recipe.
